Why it sits next to the BIFL list

Paper-filtered pour-over into glass is her brew pick (polyphenols through the paper; diterpenes trapped; hot water off plastic). That matches Chemex Glass Handle / Hario V60 Ceramic 02 + paper. Frieling, Cafelat Robot, moka, and percolator remain the materials/BIFL winners and sit on the unfiltered side of the cholesterol plot.

Brew method — paper filter vs unfiltered LDL

Two chemical families, opposite filter behavior: polyphenols (water-soluble) go through paper; diterpenes (cafestol, kahweol) are fat-soluble oils. Paper traps them. French press, espresso, boiled/Turkish, moka, percolators, and many office machines do not.

Unfiltered coffee (espresso, French press, boiled) can raise LDL 10–30 mg/dL in a few weeks. Her line: there is no reason coffee should be raising LDL that much.

Filtered coffee (cohort she cites): ~15% lower all-cause death vs none; 2–5 cups/day → ~20% lower CVD death. Neither association showed up for unfiltered / French press. Extreme boiled/Turkish ≥8 cups/day → nearly double dementia vs moderate drinkers — a tiny tail, not a once-a-day press.

Espresso special case in the same talk: 2–3 servings/day still associated with lower overall mortality (high antioxidant density per ounce might offset diterpenes). That is a cohort association, not a lipid trial.

Plastic: many drip machines run hot water through plastic; espresso pods are also plastic + hot water. Her pick: pour-over into a glass container, not a plastic drip machine.

Timing

Morning-only drinkers vs non-drinkers: 12% lower all-cause death, 31% lower CVD death. People who spread coffee through afternoon and evening did not show the same. Caffeine within ~3 hours of natural bedtime shifts the internal clock 45–60 minutes (“mini jet lag”). Cutoff: 8–10 hours before natural bedtime (noon / early afternoon for most). Afternoon cup: decaf if you want polyphenols without the sleep hit. L-theanine does not cancel the sleep hit.
